Dear Santa!

Why is this so hard for me to come up with a Christmas list? I have been thinking about what it is I may want or need. I can't seem to come up with anything. The problem may be that every time I see something or want something I end up just buying it.
So I have been staring at this all day, browsing any cyber Monday specials. I found some gifts for other people! :) That's always a plus right! Here are a few things I may put on the list!

Thanksgiving Pie

I made this pie last year for Thanksgiving and it was a hit! I have never been a huge pecan pie fan but when you add brownies and pecan pie it can't get any better! So I was up super early this morning to get orders done and still bake goodies for my family. Sorry for the bad pictures I was too lazy to take the good camera out so I grabbed the one right by me! Here is the recipe if any of you want to make a pie for Thanksgiving or any other time since it is so delish! The best part of all you get 2 out of this recipe! Yay score!

Brownie Pecan Pie
1/4 Cup melted butter
1/4 Cup packed brown sugar
1 Tablespoon self-rising flour
1/4 cup light corn syrup
1 teaspoon vanilla
2 eggs
2 cups pecans
1 package brownie mix and ingredients the brownies call for
2 frozen regular pie shells

Preheat the oven to 350 degrees
Place brown sugar in a mixing bowl and work out any lumps. Add the flour and stir together until the
flour disappears. Add the corn syrup, vanilla and stir until combined. Next add the melted butter fold into the mixture. In a separate bowl beat the eggs and fold into the mix until the egg is well combined. Stir in the pecans and set that bowl aside. Now prepare the box of brownie mix per the instructions on the box. Remove two frozen pie shells from the freezer and divide the brownie batter even;y between the two shells. Last step is to pour the pecan mixture evenly on top of the brownie filling in both pies. Bake for about 40-45 minutes. If the pie crust is starting to burn the last 10-15 minutes put a piece of aluminum foil across the pie. Remove and let cool.

Chicken and Spinach Bake

The weather has been so strange lately. One day it rains the next its gorgeous and sunny?! Go figure, I guess that's what we get in So Cal! I made this delicious chicken and spinach bake the other night. It was one of those comfort foods during a rainy day! To make this dish you will need the following ingredients.



Chicken and Spinach Bake 
2 large skinless, boneless chicken breasts boiled and cubed
1 stick butter, divided
1/2 small onion, diced
2 cloves chopped garlic
1 (10.75 ounce) can condensed cream
of mushroom soup
1/8 tsp dried oregano
1/8 tsp dried basil
1/8 tsp dried parsley
1/2 cup milk
splash of white wine
1 cup grated Parmesan cheese
3 large handfuls of spinach washed dried and chopped
4 ounces fresh mushrooms, sliced
2 strips cooked bacon, chopped
sliced mozzarella cheese
In a large saute pan melt 1/4C of the butter. Add the onion, chopped spinach, chopped cooked bacon, and 2 gloves chopped garlic. Saute over medium heat until the onions are translucent. Spread half of the spinach mixture into a baking dish. In a medium saucepan melt the other 1/4C butter, add 1/8t dried basil, 1/8t oregano, 1/8t parsley, 1/2C milk, can cream of mushroom soup, 1C fresh Parmesan cheese, a good splash of white wine. Bring white sauce to a slight boil and set aside. Next add the boiled cubed chicken on top of the spinach mixture. Pour half of the white sauce over the chicken, continue layering the spinach. chicken and white sauce. Top all of that with mozzarella cheese you can use sliced or shred it whichever you prefer. Bake in a pre-heated over at 400 degrees for 25-30 minutes or until it is bubbly and slightly browned on top. Serve with pasta, some garlic bread and a side salad. Enjoy!

Retail Therapy

This weekend I had some great finds! I don't know if I really want the cold dreary weather to get here or what? I am usually not a flats kind of gal, when you are 5"0 you normally always want to be in a heel or wedge. I decided to get a couple pairs of flats and what a great bargain Target has on some really cute ones!

I have also been wanting a bubble umbrella since my trip to New York. I got a really cute one with pink trim. It seems like the perfect umbrella on the days when it rains and it's windy blowing the water all over you.



Lastly to add to my jean collection I got a pair of Hudson's. I just love the fit and cut of these jeans. I was never a jean gal up until maybe a couple years ago. I found a new appreciation for denim. :) I need to start adding a few fall/winter pieces to my closet. I was looking for some sweaters or long sleeve shirts but nothing caught my eye. Happy shopping!

Triple Salted Caramel

So I have been on the hunt for a while for anything salted caramel even since Pinkberry teased me with theirs. I was out shopping and I saw an Ad with the Salted caramel Pinkberry. So naturally I wanted to try it. I walked in and the guy working told me that was an old sign and they no longer have it! Ugh really?! So I decided I would take it upon myself to satisfy this craving for the sweet and salty!!
This is what I came up with Triple Salted Caramel Cupcake! It was the perfect sweet and salty mix I wanted! I even made it it's very own Holiday Halloween box! 
Starbucks is even serving a Salted caramel mocha!! But sweet Jesus is it loaded with calories! So to make myself feel better I got it skinny! HA like that is going to do much! :)
This is my motivation to continue doing Couch to 5K!!

New Fall Scents

Over the weekend I had to go to Bath and Body works to stock up on body lotion! I always wear Black raspberry vanilla but thought I would throw in a new scent for the fall. Sweet cinnamon pumpkin!

Happy First Day Of Autumn

Happy first day of Autumn everyone! I have been looking forward to the cooler weather! I am looking forward to the sweaters, leggings, boots and darker nail polish!! I got my nails and toes done today in Essie's "Merino Cool" I am now off to bake some Salted Carmel Cupcakes to welcome the Fall!

Slow Cookin

I love slow cooking it's fast it's easy and the clean up is simple! I found a three set slow cooker and was in high heaven. I thought to myself I can get three meals done all at one time and have them prepped and put away on Sunday evening for the week!
I found this slow cooker three set at Macys last weekend on sale for $89.99 I then headed to JC Penny and found it on sale for $59.99 I bought that one as a bunco gift! Over this past weekend I found this treasure at Walmart for $34.00 same size and everything. I ended up making Chicken and cheese enchiladas in one pot, Garlic basil chicken and will serve it over angel hair pasta in the second one. The last pot I threw some chicken with seasoning and a tad bit of water cooked that up. I will end up turning that into a broccoli cheese chicken and rice casserole and serve it with warm butter rolls.
I can't wait for the fall weather to get here so I can make some delicious soups!!

Let's Get Organized!


So I have read so many blogs lately and have heard the buzz about Erin Condren! I have been lusting after one of her planners for a couple weeks now. I finally broke down and bought one, I thought at first the $50.00 price tag was a little steep for a planner you can only use for one year. I am one of those people that needs to write everything down and see it on paper.
There are so many really amazing features to this nifty little planner, I cannot wait to get this beauty in the mail! If you have not seen this planner check it out! Little Sweet Shoppe

How cute is this little candy bar display?! My girlfriends daughter turned one this past Saturday! I just loved the theme "lollipops" Everything was lollipop even the cute little sugar cookies! She really did such a wonderful job planning sweet Ella's Birthday party! All the adorable lollipop papers were done by Tom Kat Studio on Etsy! Wild Thing

Safari cake truffles are perfect for a safari themed baby shower or Birthday party! A client has a baby shower to plan and asked if we could do a safari theme for the new bundle of joy on the way! This is what we we're thinking along with some little giraffe babies to go along with them. The invites they sent out we're Giraffe's so we wanted to tie those in as well!
